Jollof Rice | The Most Flavorful Rice You'll Ever Make

This jollof rice recipe is rich with flavor from long grain rice being steeped in a tomato sauce that's filled with an incredible selection of tasty spices and seasonings. It's more than just delicious though, it's super easy to make. In fact, cooking jollof rice is almost as simple as cooking plain rice - the results are so much better though. Honestly, it's amazing what a handful of fresh ingredients - and a little bit of time - can do!

Ingredients

2 cups tomatoes, chopped

1 red bell pepper, chopped

1 cup onion, chopped

2 cloves garlic

1 Tbsp. ginger, chopped

1/2 Scotch Bonnet pepper

2 tbsp. tomato paste

1/4 cup oil

2 tsp. curry powder

4 cups vegetable broth

3 cups long-grain brown rice

salt, to taste

Instructions

  1. Add the chopped tomato, bell pepper, onion, garlic, ginger, Scotch Bonnet pepper, and tomato paste to a blender and blend until smooth.
  2. Heat oil in a large pot over medium-high heat. Add the pureed sauce from the blender, and cook while stirring for about 3 minutes. Add curry powder and vegetable broth, and cook for another 2 minutes while stirring. Add rice and stir to coat it with the sauce.
  3. Bring to a full boil, then cover and reduce to low heat. Allow the rice to cook until tender and fluffy, usually about 50 minutes.
