2 lbs golden potatoes, cut into 1" or smaller cubes, with the skin on

1 onion, chopped

¼ cup olive oil

1 tsp. salt

1 tsp. pepper

1 tsp. garlic powder

1 tsp. smoked paprika

Fresh parsley or cilantro, to serve

  1. Heat a skillet to medium-high and add the olive oil.
  2. Once it’s hot, add the potatoes and toss them until they are all covered (add more oil if needed).
  3. Add the onions, salt, pepper, garlic powder, and smoked paprika. Toss everything until well combined.
  4. Sauté at high temperature for around 15 minutes, stirring constantly with a wooden spoon to prevent it from sticking.
  5. Serve with fresh parsley or cilantro.
