These air fryer pierogies are super easy to make from scratch, and they taste incredible. They are crispy on the outside, creamy on the inside and make the perfect appetizer or main meal!

Ingredients

Scale

Dough:

2 cups All-Purpose Flour

1 tsp. Salt

1 Egg

½ cup Sour Cream

4 tbsp. Butter

1 Egg (for the egg wash)

Filling:

2 cups Mashed Potatoes

½ cup Shallots, chopped

⅔ cup Cheddar cheese, shredded

Salt and Pepper

Optional toppings:

Sour cream

Green Onions

Parsley

Cabbage

Instructions

  1. Place the flour in a bowl and make a hole in the middle. Add the salt, egg, sour cream, and butter and mix until well combined.
  2. Transfer to a working surface and knead until soft.
  3. Put back in the bowl and cover. Let it sit for at least 2 hours.
  4. Transfer to a working surface again and roll out with a rolling pin until it's ⅕ inch thick.
  5. Cut with a cookie cutter (or other round cutter), around 3-inches in diameter.
  6. Combine all the filling ingredients.
  7. Fill the pierogies with 1 tbsp. of the filling and close them using a spoon to help. Seal the edges, brush the pierogies with the egg wash and make a few holes on top with a fork.
  8. Remove the grid from the air fryer and spray with baking spray. Fill air fryer with pierogies - they should lay flat and not touch on another.
  9. Cook at 350°F (180°C) for about 10 minutes, flipping halfway through (cook in batches of 3 or 4 or more depending on air fryer size).
  10. Serve with sour cream, green onions, parsley, and cabbage.
