WATERMELON ICE CREAM

Cut the watermelon in half lengthwise. Wrap each half tightly in plastic wrap, place it cut side up in the freezer, and freeze until completely solid.

STEP 1: FREEZE THE WATERMELON

Remove one frozen watermelon half from the freezer and unwrap it. Use the edge of a sturdy spoon or fork to scrape the center of the frozen fruit, creating a shallow cavity.

STEP 2: CREATE A SMALL WELL

Pour a small splash of heavy cream into the cavity. Continue scraping the frozen watermelon into the cream, stirring and pressing the two together as you work.

STEP 3: ADD THE HEAVY CREAM

Scoop the watermelon ice cream into bowls or serve it directly from the frozen watermelon shell. Enjoy it immediately while the texture is soft and creamy.
