VEGETARIAN TATER TOT HOTDISH

INGREDIENTS

– 1 tbsp olive oil – 1 onion – 1 carrot – 2 cloves garlic – 1 cup frozen corn – 1 cup frozen peas – 1 cup condensed soup – ½ cup shredded cheese – ¼ cup parmesan  – 30+ tater tots

INSTRUCTIONS

1. Cook onions and carrots in skillet. Add garlic and cook until fragrant. Stir in peas, corn, and condensed soup. 2. Top veggies with cheese and tater tots. 3. Bake 375°F for 30 minutes.
