VEGETARIAN MEXICAN CASSEROLE

INGREDIENTS

– 1 red onion – 2 tbsp. olive oil – 2 tsp. cumin – 1 tsp. paprika – 1 tsp. salt – 1 tsp. oregano – 1 tsp. thyme

INGREDIENTS CONTINUED

– 1 jalapeno – 1 red paprika – 1 cup corn – 1 cup black bean – 1 cup enchilada sauce – ½ cup  cheese – 1 cup rice

INSTRUCTIONS

1. Mix spices in skillet. Add peppers and cook. Add beans and corn. 2. Add rest of ingredients and boil. 3. Top with cheese and bake 360F for 10 minutes.
