SPINACH, FETA, & RICE CASSEROLE

INGREDIENTS

– 1 tbsp olive oil – 10 oz frozen spinach – 2 garlic cloves – 3 cups brown rice – ¾ cup crumbled feta cheese – 1 tsp salt – ½ tsp black pepper – 4 eggs – ¼ cup milk – 1 tbsp Dijon mustard

INSTRUCTIONS

1. Sauté spinach and garlic in skillet 2. Stir in rice and feta 3. Whisk eggs, milk, and mustard in a bowl. Add to the rice  4.  Transfer to oven and bake for 15-20 minutes at 400°F.
