SOUR CREAM CHICKEN ENCHILADAS

INGREDIENTS

– ¼ cup butter – ¼ cup flour – 1 garlic clove – 2 cups broth – 1 cup sour cream – 2 tbsp. pickled jalapenos – 1 tsp. jalapeno juice

INGREDIENTS CONTINUED

– 1 tsp. cumin – 1 tsp. salt – ½ tsp. pepper – 2 cups chicken – 4 big corn tortillas – 2 cups shredded cheddar cheese

INSTRUCTIONS

1. Melt butter in pan. Stir in flour. Add garlic and cook. 2. Stir in broth and boil. Stir in rest of ingredients. 3. Fill tortillas with chicken and roll. Top with sauce and cheese. Bake 350F 30 mins.
