SAUSAGE LENTIL SOUP

INGREDIENTS

– 1 lb. Italian sausage – 3 garlic cloves – 1 cup onion – 1 celery stalk – 1 cup carrots – 1 cup zucchini

INGREDIENTS CONTINUED

– 5 cups chicken broth – 2 cups diced tomatoes – 2 cups dry lentils – 2 tsp. salt – ¼ tsp. pepper

INSTRUCTIONS

1. Brown sausage and cook garlic. 2. Add onion, celery, carrots, and zucchini. Saute for 1 minute. 3. Add chicken broth, dice tomatoes, and lentils. Simmer for 1 hour.
