SALMON STEW

INGREDIENTS

– 1 lb salmon fillet, cut into 1 inch cubes – 1 tbsp olive oil – 1 tbsp butter – 1 onion, finely diced – 1 small carrot, grated – 1 celery stalk, diced

INGREDIENTS, CONT.

– 3 garlic cloves, minced – 3 tbsp tomato paste – ½ tsp chili flakes – 2 cups fish or chicken broth – ½ cup heavy cream – Salt and pepper to taste – Fresh parsley, for garnish

INSTRUCTIONS

1. Saute the vegetables in a large pot 2. Add the garlic, tomato paste, and broth and bring to a boil.  3. Simmer for 15 mins 4. Add the salmon and cream and cook for 7 mins
