RATATOUILLE RECIPE

INGREDIENTS

– 2 eggplants – 6 Roma tomatoes – 2 zucchinis – 2 tbsp. EVOO – 1 cup onion – 2 cloves garlic – 2 cups bell peppers– 2 cups crushed tomatoes – 4 tbsp. olive oil – Rosemary, parsley & thyme

INSTRUCTIONS

1. Slice tomato, zucchini, and eggplant into rounds. 2. Saute other veggies in a skillet. Add crushed tomatoes. Pour in dish. 3. Alternate veggie slices in dish. Bake at 350F for 1 hour.
