POTATO EGG CASSEROLE

INGREDIENTS

- ⅓ cup onion -1 green bell pepper -2 russet potatoes,  -Salt and pepper -6 eggs -½ cup shredded cheddar cheese

INSTRUCTIONS

1. Preheat oven to 350°F. 2. Cook onions for 1 minute. 3. Add bell peppers and potatoes. Cook stirring for 4-5 minutes.

4. Transfer the vegetables to  casserole dish. 5. Beat eggs with some salt and pepper in a bowl. Stir in cheese and transfer to baking dish. 6. Bakefor 35-40 mins.
