PINEAPPLE RICE

INGREDIENTS 

– 1 ½ cups chopped pineapple – 1 red bell pepper, diced – 1 cup peas, frozen – ½ cup cashews – 3Tablespoons olive oil – 2 Tablespoons soy sauce

INGREDIENTS, CONT.

– 2 cups cooked brown rice – 1 egg – ¾ cup green onions, chopped – 2 small limes – Salt to taste – Fresh coriander, for garnish

INSTRUCTIONS

1. Fry egg in a wok and set aside.  2. Cook oil, pineapple, pepper, and peas. Add to egg bowl. 3. Combine cooked rice, cashews, and veggie mix to wok 4. Toss all in soy sauce and lime juice
