– 5 medium Russet potatoes, peeled and sliced in thick discs (about ½ inch)
– 1 sweet onion, cut into big chunks
– 3 tbsp. vegetable oil
– salt and pepper to taste
INSTRUCTIONS
1. Heat oil in skillet and add potatoes and onions. Cook until brown on both sides
2. Cover with lid and lower temperature. Cook for 15 minutes until potatoes are soft.
