NORWEGIAN LEFSE RECIPE

INGREDIENTS

– 2.5lb. Russet potatoes – ½ cup butter, room temperature – ½ cup heavy cream – 1 cup flour – 1 good pinch of salt

INSTRUCTIONS

1. Boil potatoes for 45 minutes. Drain and mash with butter .2. Fold in cream, flour, and salt. Press through rice. Make balls. Roll out.  3. Cook in skillet for 1 minute each side.
