CAJUN MEATBALL STEW

INGREDIENTS

For the Meatballs: – 1 ½ lbs ground beef – ½ cup bread crumbs – ¼ cup diced onion – 2 garlic cloves – ¼ cup parsley – 1 egg – 1 tsp cajun seasoning – ½ tsp salt – ¼ tsp black pepper

For the Stew: – 2 tbsp + ¼ cup vegetable oil – ¼ cup AP flour – 1 medium onion – 2 ribs celery – 1 carrot – 1 bell pepper – 3 garlic cloves – 1 tbsp cajun seasoning

– 1 can diced tomatoes – 3 medium potatoes, cut into 1 inch cubes – 4 cups beef broth – ½ tsp dried thyme – ¼ tsp paprika – ½ tsp salt – ¼ tsp pepper – ¼ cup Parsley, chopped

INSTRUCTIONS

1. Make and cook the meatballs 2. Make a roux and add garlic and vegetables 3. Add the remaining ingredients and stir 4. Add meatballs and bring to a simmer 5. Cook for 45 mins
