HOMEMADE SUB ROLLS 

Made with bread flour, milk powder, honey, and butter, these homemade hoagie rolls come out of the oven tasting like something from a real bakery.

These rolls have the perfect structure: a slightly crisp, golden crust  and a soft, airy interior with just enough chew to stand up to saucy fillings without getting soggy.

INGREDIENTS

For this recipe, you need: Bread flour, Water, Milk, Honey, Butter, Instant yeast, Milk powder, Salt, and Egg.

In a large bowl, combine the lukewarm water, lukewarm milk, honey, and instant yeast. Stir together gently and let it sit for about 10 minutes until the mixture is frothy.

STEP 1: ACTIVATE THE YEAST

Add 3 cups of the bread flour, the milk powder, melted butter, and salt to the yeast mixture. Stir together until a shaggy dough form. Knead with remaining flour for 5-7 mins.

STEP 2: MIX THE DOUGH

Shape the dough into a ball and place it into a lightly oiled bowl. Cover with plastic wrap and set in a warm place to rise for about 1 hour, or until it has doubled in size.

STEP 3: BULK FERMENT

Once doubled, turn the dough out and divide it into 4 equal portions. Press a portion into a rectangle, then roll it up tightly from one end to create a cylindrical shape.

STEP 4: PORTION AND SHAPE

Cover the shaped rolls loosely with plastic wrap and allow them to rise for 30 to 45 minutes in a warm place.

STEP 5: SECOND RISE

Brush each roll with beaten egg wash. Using a sharp knife or bread lame, cut a single slit lengthwise down the center of each roll.

STEP 6: EGG WASH AND SCORE

Bake at 350°F for 22 to 25 minutes until the rolls are deeply golden brown. Transfer to a wire rack and let them cool for at least 15 minutes before slicing
