HOMEMADE APPLE JELLY

INGREDIENTS FOR THE APPLE JELLY

– Apples (I used Gala, but Granny Smith work really well) – Water – Sugar – Lemon

Place the quartered apples in a large pot and cover with water. Bring to a boil over then reduce to a simmer and cook for about 30 minutes, until the apples are soft.

STEP 1: SIMMER THE APPLES

STEP 2: MASH AND STRAIN

Mash the apples well with a potato masher.Strain the mixture through a fine-mesh sieve lined with cheesecloth to collect clear apple juice.

STEP 3: SWEETEN THE JUICE

Return the apple juice to the pot. Stir in the sugar and lemon juice until dissolved.

STEP 4: COOK TO REDUCE

Bring the mixture back to a simmer and cook until reduced by half, skimming any foam or impurities that rise to the top.

STEP 5: JAR AND STORE

Pour the hot jelly into sterilized jars. Seal tightly and let cool to room temperature before refrigerating.

- Use tart apples as they have the most natural pectin - Avoid pushing the apple when straining to prevent cloudy juice - Add cinnamon sticks to the pot for cinnamon apple jelly
