DAIRY FREE MASHED POTATOES

INGREDIENTS

– 1lb. Russet potatoes or Yukon Gold potatoes – 3 tablespoon dairy free butter – Salt and pepper, to taste – Fresh thyme for garnish

INSTRUCTIONS

1. Peel potatoes, rinse. Cover with water in pot. 2. Boil for 25 minutes. Drain water. 3. Mash potatoes with butter, salt, pepper, and some cooking liquid.
