INGREDIENTS FOR THE PASTA

– Pasta  – Butter – Onion – Garlic – Cherry tomatoes – Tomato paste – Sun-dried tomatoes – Italian seasoning – Heavy cream – Pasta water – Spinach – Parmesan cheese and more

Season the chicken breasts then lightly drizzle with olive oil. Roast in a 425°F (220°C) oven for 12–15 minutes.

STEP 2: BUILD THE FLAVOR BASE

In a large skillet over medium heat, melt the butter and add the diced onion. Cook until translucent, then add the garlic and cook for about 1 minute.

STEP 3: ADD TOMATOES

Stir in the cherry tomatoes, tomato paste, and sun-dried tomatoes. Cook for about 2 minutes, until the tomatoes soften and release their juices.

STEP 4: MAKE THE CREAM SAUCE

Add Italian seasoning, paprika, salt, and pepper. Stir for 1 minute, then pour in the heavy cream and pasta water. Let the sauce simmer gently for about 2 minutes.

STEP 5: FINISH THE SAUCE

Remove the skillet from the heat and add the spinach and Parmesan cheese. Stir until the spinach wilts and the cheese melts into a smooth, creamy sauce.

STEP 6: COMBINE EVERYTHING

Return the sliced chicken to the pan and let it simmer briefly in the sauce. Add the cooked pasta and toss until everything is evenly coated.

STEP 7: GARNISH & SERVE

Finish with extra grated Parmesan cheese on top and serve immediately while still warm.
