BUFFET STYLE CREAMY COCONUT SHRIMP

INGREDIENTS

– 1 lb large shrimp, peeled and deveined – ½ cup flour – ½ cup corn starch – 1 tsp baking powder – ¼ tsp baking soda – Salt and pepper – ½ cup + 2 tbsp water

INGREDIENTS FOR THE SAUCE

– ½ cup coconut cream – ¼ cup sweetened condensed milk – 1 tbsp corn starch – 2 tbsp water

INSTRUCTIONS

1. Bring the sauce ingredients to a simmer in a pot 2. Make the batter and coat the shrimp 3. Fry the shrimp in oil 4. Reheat the coconut sauce and toss with the shrimp
