INGREDIENTS FOR THE ONION

– Sweet onions – All-purpose flour – Cayenne pepper – Paprika – Dried oregano – Cumin – Black pepper – Kosher salt – Eggs – Whole milk – Vegetable oil

Peel onions and trim the tops. Place each onion cut-side down. Starting ½ inch from the root, slice downward into quarters. Continue slicing until you have 12–16 petals.

STEP 1: PREP THE ONIONS

STEP 2: MAKE THE SEASONED FLOUR

In a large bowl, mix flour, cayenne, paprika, oregano, cumin, black pepper, and salt thoroughly.

STEP 3: MAKE THE EGG WASH

In another bowl, beat eggs and mix in milk until smooth and fully combined.

STEP 4: DREDGE THE ONIONS

Coat each onion thoroughly in the seasoned flour Dip into the egg wash. Return to the seasoned flour for a second coating.

STEP 5: FRY

Heat oil to 375°F. Carefully lower one onion, root side down, into the oil. Fry for 10 minutes until golden and crispy. Remove and drain on paper towels

STEP 6: SERVE

Let cool slightly, then serve warm with your favorite dipping sauce (Bloomin’ Onion sauce, spicy mayo, or ranch).

- Use large sweet onions like Vidalia for ideal flavor - Let the onion rest for 5 mins so the onion easily pulls apart - Replace the milk with beer for a lighter batter
