For this recipe you will need: Unsalted butter, Light brown sugar, Sugar, Egg, Vanilla bean paste, Flour, Corn starch, Espresso powder, Baking soda, Sea salt, Mini chocolate chips
Preheat the oven to 350°F. In a medium bowl, whisk together the flour, cornstarch, espresso powder, baking soda, and flaky sea salt.
STEP 1: PREP THE OVEN AND DRY INGREDIENTS
STEP 2: MIX THE WET INGREDIENTS
In a separate bowl, mix the softened butter, brown sugar, and granulated sugar until smooth and well combined. Add the egg, egg yolk, and vanilla bean paste.
STEP 3: MAKE THE DOUGH
Gradually add the dry ingredients into the wet mixture, folding gently with a spatula until just combined. Fold in the mini chocolate chips.
STEP 4: SHAPE AND CHILL
Transfer the dough onto the prepared baking sheet and press it into an even rectangle about 1/2 inch thick. Freeze the dough for 20 to 30 minutes.
STEP 5: CUT INTO FRY SHAPES
Use a sharp knife or bench scraper to cut the chilled dough into long fry-shaped strips. Separate the strips then freeze them again for another 30 minutes.
STEP 6: BAKE
Place no more than 4 cookie fries per baking sheet, leaving space between them. Bake for about 13 minutes, or until the edges are lightly golden and the centers are set. Let them cool.
