– 0.75lb. Mexican chorizo
– ½ cup onion
– ½ cup bell pepper
– 6oz. tortilla chips
– 10 eggs
– ¼ cup milk
– 8oz. can Rotel tomatoes
– 1 cup shredded cheese
1. Cook chorizo. Add pepper and onion and cook.
2. Layer chips, chorizo mix, and cheese in baking dish.
3. Whisk eggs, milk, salt, pepper and pour into dish.
4. Bake at 400F for 30 mins
