INGREDIENTS
For the chicken and wraps, you need: Chicken breast, Chicken thighs, Honey, Avocado oil, Tortilla wraps, Lettuce, Red onion, Sweet peppers, and Cilantro
In a large bowl, combine the cubed chicken breast and thighs with the avocado oil, and all of the marinade ingredients. Cover and refrigerate for at least 1 hour.
STEP 1: MARINATE THE CHICKEN
Heat a large skillet over medium-high heat. Add the marinated chicken in batches, cooking 8 to 10 minutes, stirring occasionally, until the chicken is fully cooked through.
STEP 2: COOK THE CHICKEN
Whisk together the mayonnaise, chipotle adobo sauce, lime juice, garlic powder, smoked paprika, salt, and black pepper until smooth and creamy.
STEP 3: MAKE THE CHIPOTLE LIME MAYO
Warm the flour tortillas in a dry skillet over medium heat for 30 to 60 seconds per side, or microwave wrapped in a damp paper towel for 20 to 30 seconds.
STEP 4: WARM THE TORTILLAS
Lay each warm tortilla flat and spread a layer of chipotle lime mayo down the center. Add the lettuce, chicken, and remaining toppings. Fold and wrap the tortilla.
STEP 5: BUILD THE WRAPS
Place the finished wraps seam-side down in a lightly greased skillet over medium heat. Cook for 1 to 2 minutes per side until golden brown and toasted.
