CHICKEN AND CAULIFLOWER CASSEROLE

INGREDIENTS

– 1 cauliflower – 2 cups rotisserie chicken – 2 tbsp butter – 3 tbsp flour – 1 ½ cups milk – 1 cup shredded – ½ cup mozzarella  – 2 cups spinach – ¾ cup mushrooms – 3 tbsp breadcrumbs

INSTRUCTIONS

1. Boil cauliflower. 2. Melt butter, add flour. Stir in rest of ingredients. 3. Transfer to dish. Top with bread crumbs.  4. Bake 375°F for 20 minutes covered, 20 uncovered.
