– 1 cup bacon
– 1 celery
– ½ onion
– ½ green bell pepper
– 1 garlic clove
– 1 ½ cups black-eyed peas
– 1 bay leaf
– 1 tsp. dried thyme
– Salt
– 2 cups white rice
1. Cook bacon. Add celery, onion, green bell pepper, and garlic. Cook in bacon fat for 10 mins.
2. Add black eyed peas, thyme, and water.
3. Simmer for 1 hour. Serve with rice.
