This birria grilled cheese recipe is rich, savory, slightly spicy, and completely over the top in the best possible way.
WHY YOU'LL LOVE THIS RECIPE
The recipe is easy enough for a weeknight, especially with Trader Joe's prepared birria as a shortcut.
INGREDIENTS
Here is everything you'll need: Butter, Onion, Prepared birria, Sourdough bread, Shredded cheese, and Salsa verde
Melt butter in a large skillet over medium heat. Add the diced onion and cook until softened. Add the birria meat and continue cooking until heated through.
STEP 1: COOK THE ONION AND BIRRIA
In another skillet over medium heat, melt the butter. Add 2 slices of sourdough and sprinkle shredded cheese and a spoonful of salsa verde over the cheese.
STEP 2: SET UP THE GRILLED CHEESE STATION
Add the birria onto one slice and close it with the other slice. Cook until the bottom is golden brown, then flip and cook the other side.
STEP 3: BUILD AND PRESS THE SANDWICH
Repeat the process until all three sandwiches are done. Serve immediately with the warm birria dipping sauce on the side.
STEP 4: REPEAT AND SERVE
VARIATIONS
For the most authentic birria experience, briefly dip the sourdough in warm birria consommé before placing it in the buttered skillet. It adds an extra layer of flavor to the bread itself.
STORAGE TIPS
If you have leftovers, store them wrapped in the fridge for up to 2 days. Store the birria filling and dipping sauce separately in airtight containers in the refrigerator for up to 4 days.
