BEANS AND GREENS

INGREDIENTS

– 2 Tbsp olive oil – 1 large shallot, finely diced – 4 large cloves garlic, minced – 1/2 tsp red pepper flakes 

INGREDIENTS, CONT.

– 1 bunch Swiss chard or other greens of choice, chopped – 1 (15 oz.) can white beans, drained and rinsed – 1/2 tsp sea salt – 1 cup vegetable broth – 1 Tbsp lemon juice

INSTRUCTIONS

1. Saute the shallot, garlic, and red pepper flakes in oil 2. Add the swiss chard 3. When wilted, add the beans 4. Add the broth and lemon juice and simmer for 15-25 mins
