Garlic Shrimp Spaghetti (Quick and Easy)

This shrimp spaghetti has perfectly cooked shrimp and pasta coated in a flavorful garlic butter sauce with a dash of red pepper flakes and freshly grated parmesan cheese. It's the ideal busy weeknight dinner, and you can have it ready and on the table in about 15 minutes! 

Ingredients

1/2 lb. large shrimp, deveined and peeled

16 oz. spaghetti 

2 tbsp. extra virgin olive oil

2 tbsp. butter

3 cloves garlic, thinly sliced

1 tsp. crushed red pepper

2 tbsp. fresh parsley, chopped

lemon juice, parmesan cheese optional, for garnish

Instructions

  1. Season the shrimp with salt and pepper.
  2. In a large pot of boiling salted water, cook the pasta until it is one minute shy of al-dente. Reserve a cup of pasta water and drain the pasta.
  3. Melt the butter in a skillet over medium heat and add the shrimp. Cook for about 2-3 minutes until they are just cooked through and opaque. Remove and set aside.
  4. In the same pan, add the olive oil. Add garlic, cook until the edges are lightly golden, and stir in the red pepper flakes.
  5. Add pasta and ½  cup of pasta water, and toss well to combine. Add shrimp, and season with salt to taste while continuing to stir around the pan.
  6. Once the pasta is tender and has absorbed most of the sauce, remove from heat and mix in the parsley. Top with parmesan cheese if desired.
