This bourbon marinated Longhorn salmon is the ultimate restaurant-quality weeknight dinner. It’s incredibly tender and flaky, glazed and marinated in a sweet and savory bourbon sauce that’ll have you licking your plate clean. And it cooks up in as fast as 10 minutes!

Ingredients

Scale

2-4 salmon filets, skinless and clean

2 tbsp. chives, chopped

1 cup bourbon

¼ cup pineapple juice

2 tbsp. soy sauce

2 tbsp. brown sugar

A dash of salt

A dash of ground black pepper

A pinch of garlic powder

1 tbsp. olive oil

Instructions

  1. Mix the pineapple juice, brown sugar, bourbon, and soy sauce in a bowl until sugar dissolves.
  2. Add the salt, pepper and garlic powder. Stir and mix well.
  3. In a baking dish, set the filets and pour the marinade mix on the fish. Tumble the filets a little.
  4. Let the fish sit in the marinade for two hours. Refrigerate the dish so it doesn’t go bad.
  5. Take the dish out after two hours and pour the olive oil and start grilling the marinated filets on the stove. You can also fry to your liking on medium heat.
  6. Keep brushing the marinade mixture on the filets as they cook through. Each side needs 5 to 7 minutes to cook well.
  7. Take it off the heat and serve with rice and Longhorn brussel sprouts.
