The BEST Cheesy Eggplant Casserole Recipe (Prepped In 10 Minutes)

This classic eggplant casserole recipe combines tender roasted eggplant with rich, melty cheese and a flavorful sauce to make a dish that's to die for. Plus, it's so, so easy to make! In fact, 10 minutes worth of prep work is all you'll need to invest to put it together. Then, the oven does all of the heavy lifting after that.



1.5 lb eggplant, trimmed

Salt and pepper, to taste

½ cup pizza sauce

1 cup shredded mozzarella

2 tbsp freshly grated parmesan cheese

Nonstick cooking spray, as needed (or olive oil)


  1. Preheat your oven to 500°F and line two baking sheets with parchment paper.
  2. Do not peel the eggplant. Cut the eggplants into ¼-inch thick slices. 
  3. Place the eggplant on the baking sheets and coat them with cooking spray.
  4. Season the eggplant with salt and pepper and roast for 15 minutes.
  5. Remove the baking sheet from the oven. Flip the eggplant slices and roast for another 10 minutes.
  6. Reduce the oven heat to 400°F.
  7. Place half the roasted eggplant slices into a baking dish, gently greased with cooking spray. 
  8. Spread half the marinara on top of the eggplants and sprinkle with half of the mozzarella cheese on top.
  9. Add the second layer of eggplants, pizza sauce, mozzarella, and finally, parmesan cheese on top.
  10. Bake the casserole at 400°F for 15-20 minutes.
  11. Cool briefly before serving.
