1 lb. (500g) ground pork sausages, chopped

3 eggs

1 cup half and half

salt and pepper to taste

4 slices bread, toasted and broken into pieces

1 1/2 cup cheddar cheese, shredded

  1. Grease a casserole dish and preheat the oven to 350°F (180ºC).
  2. In a non-stick skillet, cook the sausages, breaking them until they brown, and drain excess grease.
  3. In a bowl, mix the eggs, half and half, and season with salt and pepper.
  4. Add the sausages, bread, and half of the cheese and mix to combine.
  5. Transfer to the baking dish and top with the rest of the cheese (you can refrigerate covered with foil overnight or until ready to bake if you want to make this casserole ahead of time).
  6. Bake for 30 minutes, or until the cheese is bubbly and the egg mixture has set.
