This copycat Chipotle black beans recipe is not only super delicious, but it's also super easy to make. It combines black beans with an assortment of spices and fresh ingredients to make a flavorful side dish that the whole family is guaranteed to love. And, best of all, only 10 minutes of prep work is all that's needed to make 'em!

Ingredients

1 tbsp olive or rice bran oil

1 onion, chopped

2 tsp garlic paste

8 oz. (0.5 lb.) black beans, soaked overnight, rinsed and drained

2 tbsp adobo sauce

2 jalapenos, sliced

½ tsp cumin powder

½ tsp oregano

1-2 bay leaves

3 cups water

1 tbsp lime juice, or to taste

1 tbsp lemon juice, or to taste

Salt and pepper, to taste

Instructions

  1. Heat oil in a saucepot over medium-high heat.
  2. Add onion and cook, stirring for 5 minutes.
  3. Add garlic paste and cook for 30 seconds or until fragrant. 
  4. Add beans, adobo sauce, jalapenos, cumin, oregano, and bay leaf. 
  5. Add water, so the beans are covered.
  6. Bring the beans to a boil and reduce the heat. Simmer the beans for 1 ½-2 hours. Remove the beans and stir with lemon and lime juice.
  7. Adjust the seasonings and serve as desired.
