The BEST Cabbage Soup Recipe (Healthy & Easy To Prep In Just 5 Minutes)

This cabbage soup recipe is absolutely delicious. It combines perfectly cooked cabbage with an assortment of fresh veggies, aromatics, and flavorful homemade broth to create a lip-smacking soup you won't be able to get enough of. 3 tbsp. olive oil

1/2 onion, chopped

2 cloves garlic, minced

8 cups chicken broth (or vegetable broth)

1 tsp. salt

1/2 tsp. dried thyme

Black pepper to taste

5 cups cabbage, chopped into 1 1/2" chunks

2 cups carrots, peeled and chopped

2 stalks of celery, sliced thinly

2 cups stewed tomatoes


  1. In a large pot, add the olive oil over medium heat, then add in the onions and garlic and cook until the onions are translucent, about 3-5 minutes.
  2. Add cabbage, carrots, celery, thyme, tomatoes, salt, and pepper, and cook for 2-3 minutes more.
  3. Add in the chicken broth and simmer for 30 minutes.
