CHIPOTLE HONEY CHICKEN

This Chipotle honey chicken is easy to make for burrito bowls, tacos, or quesadillas, so you can have it whenever the craving hits.

INGREDIENTS

For the chicken you'll need: Chicken thighs, Paprika, Cumin, Garlic powder, Salt, Black pepper, Chipotle peppers in adobo, Honey, and Lime juice

Cook the jasmine rice according to the package directions. Once cooked, toss with the chopped cilantro, lime juice, and salt while still hot.

STEP 1: MAKE THE CILANTRO LIME RICE

In a large bowl, combine the chicken ingredients. Toss until fully coated. Let it sit for 15 minutes, or marinate in the fridge for 24 hours.

STEP 2: MARINATE THE CHICKEN

Heat a large skillet or cast iron pan over medium-high heat. Add the chicken and cook for 5-7 minutes per side, pressing down slightly to ensure good contact with the pan.

STEP 3: COOK THE CHICKEN

In a small saucepan combine the honey, adobo sauce, and lime juice. Warm over low heat, whisking until fully incorporated and hot.

STEP 4: MAKE THE HONEY CHIPOTLE SAUCE

Add a generous portion of cilantro lime rice to a bowl. Top with about a cup of the chopped chicken. Spoon the warm honey chipotle sauce over the chicken.
