INGREDIENTS
All you need for this recipe is: Fresh or frozen elderberries, Granulated sugar, and Lemon jucie
If using frozen elderberries, let them thaw completely first. Wash and dry the berries thoroughly, making sure to remove any stems, leaves, or unripe berries.
STEP 1: PREP THE BERRIES
Use a potato masher to gently crush the berries directly in the pot, releasing their juices.
STEP 2: CRUSH THE BERRIES
Add the granulated sugar and lemon juice to the pot, stirring until everything is well combined.
STEP 3: ADD THE SUGAR AND LEMON JUICE
Place the pot over low heat and cook for about 20 minutes, stirring occasionally, until the jam thickens and the berries are fully and thoroughly cooked through.
STEP 4: COOK THE JAM
Spoon a small amount onto a plate and place it in the refrigerator for 3 minutes. If it forms a light skin on top and wrinkles when you push it gently, it's done.
STEP 5: TEST FOR DONENESS
Carefully ladle the hot jam into sterilized jars, leaving a small amount of headspace at the top of each jar.
STEP 6: JAR THE JAM
Refrigerate for immediate use within a few weeks, or process the jars in a hot water bath using proper canning procedures if you plan to store them at room temperature for longer.
