LOADED SWEET POTATOES

These loaded sweet potatoes are cozy, hearty, and packed with flavor, and they feel like comfort food while still being a balanced meal.

INGREDIENTS

For this recipe you will need: Sweet potatoes, Ground beef, Garlic, Onion, Tomato paste, Italian seasoning, Chili powder, Paprika, Salt and pepper, and Mozzarella cheese

Preheat oven to 400°F. Scrub sweet potatoes clean and place on a baking sheet. Bake 60 to 75 minutes, until very soft and a fork slides in easily.

STEP 1: BAKE THE SWEET POTATOES

STEP 2: COOK THE BEEF MIXTURE

In a skillet sauté diced onion. Add garlic and beef and cook until browned. Stir in tomato paste and seasoning. Cook 2 to 3 minutes until everything is well combined.

STEP 3: STUFF THE SWEET POTATOES

Slice sweet potatoes lengthwise and spread open. Fluff the inside with a fork. Spoon half the beef mixture into each potato.

STEP 4: ADD CHEESE AND BROIL

Top with mozzarella and broil until the cheese is melted and bubbling on top.

VARIATIONS

Give this recipe a boost of veggies with red pepper, mushrooms, or spinach. Or swap the beef for ground turkey for a lighter version.

STORAGE TIPS

Refrigerate this recipe in an airtight container for 4 days, or freeze the potatoes and beef mixture separately. Reheat in the oven at 350°F until warmed through.
