BRUSCHETTA CHICKEN PASTA WITH BACON

This pasta because is the best combo of fresh and hearty. It’s basically bruschetta meets pasta salad, with enough protein to make it a full meal.

INGREDIENTS

For this recipe you will need: Chicken breasts, Cherry tomatoes, Fresh basil, Mozzarella pearls, Bacon, Bowtie pasta, Balsamic vinaigrette, Olive oil, Lemon, Garlic, and more

Add balsamic vinegar, olive oil, lemon juice, garlic, mustard, honey, dried basil, salt, and pepper to a jar. Shake until well combined.

STEP 1: MAKE THE DRESSING

STEP 2: COOK AND COOL THE PASTA

Cook bowtie pasta according to package directions until al dente. Rinse with cool water and drain well.

STEP 3: ASSEMBLE THE PASTA

Add cooled pasta to a large bowl. Add grilled chicken, tomatoes, mozzarella pearls, fresh basil, and bacon.

STEP 4: DRESS AND TOSS

Pour the balsamic dressing over the top and gently toss until evenly coated. Serve immediately, or chill for 30 minutes for even better flavor.

VARIATIONS

For a boost of veggies, add cucumbers, spinach, or roasted red pepper. Or, drizzle with a balsamic glaze for a true caprese vibe.

STORAGE TIPS

Freezing this recipe is not recommended but you can refrigerate leftovers in an airtight container for 3 days. For best texture, store bacon separately and add right before serving
