These banana oat pancakes are soft, lightly sweet, naturally flavored with banana and cinnamon, and made in a blender with oats instead of flour.

A lot of “healthy pancakes” feel dry or bland. These don’t. Greek yogurt makes the texture tender and creamy, oats give structure, and banana adds sweetness and moisture.
INGREDIENTS
What you need: Rolled oats, Banana, Vanilla extract, Baking powder, Cinnamon, Egg, Greek yogurt, and your toppings of choice.
Add oats, banana, vanilla, baking powder, cinnamon, egg, and Greek yogurt to a blender. Blend until completely smooth, about 30 seconds.
STEP 1: BLEND THE BATTER
STEP 2: HEAT THE PAN
Lightly coat a nonstick skillet or griddle with cooking spray and heat over medium-low.
STEP 3: COOK THE PANCAKES
Pour about 1/4 cup batter per pancake. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown on the other side.
STEP 4: REPEAT
Wipe the skillet clean if needed, reapply cooking spray, and repeat with remaining batter. Makes about 3 to 4 pancakes.
STORAGE TIPS
You can store cooked pancakes in an airtight container for up to 3 days. When ready to reheat, microwave for 15 to 25 seconds, or warm in a skillet over low heat.
