INGREDIENTS FOR THE ALFREDO
– Butter
– All-purpose flour
– Milk
– Heavy cream
– Cream cheese
– Bleu cheese
– Parmesan cheese
– Red chili flakes
– Salt & pepper
– Dried parsley
– Oregano
Mix smoked paprika, black pepper, salt, garlic powder, and dried parsley together. Rub the mixture generously onto the chicken breasts. Allow them to marinate for 30 mins.
STEP 1: MARINATE THE CHICKEN
STEP 2: GRILL THE CHICKEN
Heat a grill or grill pan to medium-high. Cook the chicken for 6–8 minutes per side, or until fully cooked through. Remove from heat and let rest.
STEP 3: START THE ALFREDO SAUCE
In a large skillet over medium heat, melt the butter. Once melted, reduce the heat to low and whisk in the flour until smooth, forming a roux.
STEP 4: ADD MILK & CREAM
Slowly pour in the milk while whisking to remove any lumps. Add the heavy cream and continue whisking until the mixture begins to thicken.
STEP 5: ADD CHEESES AND SEASONINGS
Stir in the cream cheese. Add the seasonings for the sauce. Stir in the bleu cheese and Parmesan until the sauce becomes creamy and smooth..
STEP 6: TOSS WITH PASTA
Add the cooked penne to the skillet and toss it in the Alfredo sauce until it’s well coated and glossy.
STEP 7: ASSEMBLE THE DISH
Top the sauced pasta with the sliced blackened chicken. Garnish with fresh or dried parsley and serve warm.
