INGREDIENTS FOR THE ROLLS

– Bread flour – Milk powder – Garlic powder – Salt – Sugar – Active dry yeast – Egg – Butter – Japanese starter – Whole milk

In a small saucepan, whisk together the water, milk, and flour until smooth. Cook over medium heat, stirring constantly, until it thickens into a soft paste.

STEP 1: MAKE THE STARTER

Combine the bread dough ingredients. Whisk to evenly distribute. Add the remaining ingredients. Mix until a soft, sticky dough forms. Knead until smooth.

STEP 3: FIRST RISE

Transfer the dough to a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.

STEP 4: SHAPE THE ROLLS

Punch down the risen dough to release air. Divide into 12–15 equal portions. Shape each into a smooth ball. Arrange the balls in a greased or baking dish.

STEP 5: SECOND RISE

Cover again and let rise the dough rise for 30–45 minutes, or until puffy and nearly doubled.

STEP 6: BAKE

Preheat your oven to 350°F. Bake the rolls for 20–25 minutes, or until the tops are golden and the rolls feel light and airy.

STEP 7: MAKE THE ROASTED GARLIC HERB BUTTER

Mash the roasted garlic in a small bowl. Mix in softened butter, fresh thyme, chives, and salt until smooth and spreadable.

STEP 8: FINISH & SERVE

Brush the hot rolls generously with the roasted garlic butter as soon as they come out of the oven. Serve warm, soft, and fragrant.
