INGREDIENTS FOR THE KABOBS

– Garlic – Kosher salt – Ground lamb – Onion – Fresh parsley – Ground coriander – Ground cumin – Cinnamon – Allspice – Cayenne pepper – Ground ginger – Black pepper – Skewers

Using a mortar and pestle or the flat side of a chef’s knife, mash the minced garlic with the salt to form a smooth paste.

STEP 1: MAKE A GARLIC PASTE

STEP 2: MIX THE MEAT

In a large bowl, combine the ground lamb, garlic, grated onion, and seasonings. Mix until everything is fully blended—your hands work best for this.

STEP 3: SHAPE THE KABOBS

Divide the mixture into small meatballs. Press each around the tip of a skewer and flatten into an oval. Place kabobs on a baking sheet, cover, and refrigerate.

STEP 4: GRILL

Preheat a grill to medium heat and lightly oil the grates. Grill kabobs, turning occasionally, for 5–6 minutes until browned and cooked through.

STEP 5: SERVE

Serve hot with warm pita, garlic sauce, tahini, hummus, grilled veggies, tabbouleh, or rice.
