INGREDIENTS FOR THE SKINS

– Russet potatoes – Unsalted butter – Black pepper – Onion powder – Garlic powder – Bacon – Green onion – Shredded cheddar cheese – Shredded mozzarella cheese – Sour cream

Preheat oven to 425°F. Scrub potatoes well and poke each potato with a fork. Place on a foil-lined baking sheet. Bake 40–50 minutes.

Cut each potato in half lengthwise. Scoop out the flesh using a spoon Combine melted butter and seasonings. Brush the inside and outside of each potato.

Place potato halves on a baking sheet, cut side down, and bake for 15 minutes at 425°F.

STEP 4: FILL AND MELT

Flip potatoes cut side up. Fill each with shredded cheddar, mozzarella, and crumbled bacon. Bake an additional 5–7 minutes.

STEP 5: SERVE

Top with sliced green onions. Serve warm with a big dollop of sour cream on top or on the side for dipping.
