INGREDIENTS FOR THE SWORDFISH

– Olive oil – Swordfish fillets – Kosher salt – Fresh ground black pepper

Pat swordfish fillets thoroughly dry with paper towels. Season generously on both sides with kosher salt and freshly cracked black pepper.

STEP 1: PREP THE FISH

STEP 2: HEAT THE SKILLET

Heat olive oil in a large oven-safe skillet over medium-high until shimmering hot.

STEP 3: SEAR THE FIRST SIDE

Place swordfish fillets in the skillet and cook, without moving, for 3 minutes until a golden-brown crust forms.

STEP 4: FLIP AND FINISH

Flip fillets and cook the second side 3–4 minutes until golden and the center is opaque.

STEP 5: REST AND SERVE

Transfer swordfish to plates and rest 2 minutes before serving. Pair with lemon wedges, herbs, or your favorite side dish.
