INGREDIENTS FOR THE GROUPER

– Fillets – Butter – Lemon – Paprika – Cayenne pepper – Black pepper – Oregano and thyme – Ground cumin – Garlic and onion powder – Sugar – Kosher salt

In a small bowl, combine paprika, cayenne, black pepper, oregano, thyme, cumin, garlic powder, onion powder, sugar, and salt. Mix well and set aside.

STEP 1: MIX THE SEASONINGS

STEP 2: PREP THE FISH

Pat the grouper fillets completely dry. Melt some butter and lightly brush it onto both sides of the fillets. Generously sprinkle the seasoning mix over both sides.

STEP 3: COOK THE GROUPER

Add butter to a cast iron skillet over medium high heat. Once hot, carefully place the fillets in the pan. Cook undisturbed for about 3 minutes.

STEP 4: FLIP AND FINISH

Gently flip the fillets and cook for another 3–4 minutes, or until the fish is opaque and flakes easily with a fork.

STEP 5: SERVE

Squeeze fresh lemon juice over the fillets right before serving for a burst of brightness.
