These mini lunchbox cakes are perfect for birthdays, gifts, or just treating yourself.

INGREDIENTS
For the Cake:
– 1 box vanilla cake mix
For the Frosting:
– 1 1/3 cups heavy whipping cream
– 1/3 cup powdered sugar
– 1 tsp vanilla extract
– Pinch of salt
STEP 1: BAKE THE CAKE
Make a sheet cake and let it cool completely.
Use any flavor you like — vanilla, chocolate, red velvet, or funfetti!
STEP 2: CUT THE CAKE
Use a round cutter or glass to cut circles from the sheet cake.
2–3 layers per cake = ideal size
STEP 3: MAKE THE FROSTING
Add all of the frosting ingredients to a bowl and whip until light and fluffy.
STEP 4: FROST & STACK THE CAKES
Add frosting between layers and stack the cakes on top of each other .
Smooth it out or leave it rustic — your choice!
STEP 5: DECORATE THE CAKE
Use food coloring, piping bags, sprinkles, and fun messages.
Keep it simple or go full cake artist!
